Apple Loaf

An easy cake, perfect for a morning or afternoon snack

1 ½ cups flour

¾ teaspoon baking soda

1 teaspoon kosher salt

½ teaspoon cinnamon

¼ teaspoon nutmeg

¾ cup sugar

¾ cup vegetable oil

2 eggs

½ teaspoon vanilla

2 cups peeled and chopped apples (about 2 medium)

1 cup of walnuts

Oven: 350 degrees Fahrenheit


1. Butter a loaf pan.

2. Combine all the dry ingredients (flour, baking soda, salt, cinnamon, nutmeg and sugar) in a medium bowl with a whisk.

3. Add the oil, eggs and vanilla. Stir until just combined. Gently fold in walnuts and chopped apples.

4. Pour batter into the pan and bake about 60–70 minutes.

5. Let cool in the pan for 10 minutes before turning out on to a rack.
