Soup Nazi Be Damned

Soup is the simplest and most healthy lunch you could imagine — roast a vegetable, blend it with stock and voila! As we slip off the diet wagon — it is February after all, and the dead of winter — it's good to remind ourselves that healthy doesn't necessarily mean tasteless. Dr. Weil is a long-time devotee of the roasted vegetable and offers up a beet soup that sounds nutritious and yummy. We adapted our favorite roasted vegetable soup from Teri Lyn Fisher and Jenny Park's blog Spoon Fork Bacon by replacing parsnips with antioxidant-rich yams for an even more delicious soup. — Cerentha Harris
